This Thanksgiving soul food meal is sure to have every one running to the table! Let's make this delicious meal on a budget. I will show you how to make a whole turkey, collard greens, mac and cheese, cabbage, green beans, corn pudding, and sweet potato souffle.

Note: This budget assumes that you will have some items in your house like pantry staples like flour, sugar, vanilla extract, spices, garlic, bouillon power, condiments, cornstarch, and onions. Basically things that you don't buy every time you go to the store. Considering that this meal includes very common items, you may even have a few items in the meal already in your house beyond pantry staples. There are also a few optional ingredients in these recipes. Planning early and shopping at store like Aldi, Lidl, discounts stores, or sales can greatly decrease the cost.

The collard greens were free to me since I grew them and they are also available in my are SUPER cheap from farmers. I also used herbs right from my garden. How much things cost is very personal depending on where you live, what you already have in your house.

I mostly purchased store brands to keep the cost low, but I at times can get name brand on sale and will purchase that. I live in NC. Grocery prices will vary. Please visit churches and food banks if you are really struggling for Thanksgiving groceries.

Cajun Butter Turkey

10-12 lb turkey
Seasoning Blend
2 tbsp Kinders Buttery SteakHouse
Or ANY Butter Garlic/ Onion Seasoning
2 tbsp Creole Seasoning ( I used Toney's)
1 tsp msg (optional, sub for salt or 1 tbsp chicken bouillon)
1 tsp allspice
¼ tsp cayenne pepper
Salt/ pepper to taste

Injection Ingredients
2 ½ tbsp of the seasoning blend
2 tbsp Maggi sauce or
worcestershire sauce or soy sauce
3 whole garlic cloves
3 sprigs rosemary
3 sprigs thyme
3 tbsp honey
12 oz light beer
1 stick unsalted butter
¼ cup apple cider vinegar
1 tsp roasted garlic bouillon

Stuffing (optional)
6 oz dried stuffing
1 cup chicken broth
2 tbsp unsalted butter
4 sage leaves, chopped
1 sprig rosemary, chopped
1 sprig thyme
1 medium onion, minced
1 clove garlic, minced
1 stalk celery, minced

Note: Instead of stuffing the turkey with the stuffing, you can simply make this on the stove top or mix and bake in the oven in a small dish. Add more broth if you bake it in the oven. If you stuff the turkey you will need to bake until the stuff is ~165. I have also baked the stuffing in the turkey so it get the juices, took out when the turkey was 165 (even if the stuffing was not). Then took out the stuffing and finished baking it in a small pan. This method make the stuff absorb the turkey juices and flavor, but you don't risk drying out the breast meat.

Butter Rub
1 ½ tbsp Dijon Mustard
½ stick butter softened
3 tbsp olive oil
Remaining seasoning blend
2 spring rosemary, chopped
1 sprig thyme

Note: Please sub the spices for the spices that you have in your cabinet. This turkey recipe is very flexible.

Southern Green Beans
Ingredients
1 lb smoked turkey leg
1 piece fat back (optional)
1 tbsp unsalted butter
1 tsp salt free cajun seasoning
creole seasoning to taste ( use sparingly)
1 1/2 tsp low sodium better than bouillon
1/2 lb baby potatoes cut in half

Corn pudding Ingredients
3 cups fresh corn ( canned or frozen corn can also be used)
1 can creamed corn
1 1/4 cup heavy cream or evaporated milk
4 eggs
1/2 tbsp vanilla
1/4 tsp salt
5 tbsp butter
1/4 cup sugar (use more or less to taste)
1/2 tsp nutmeg ( less can be used if desired)
3 1/2 tbsp cornstarch

Sweet Potato Souffle

Ingredients
6 large sweet potatoes
2 stick butter
1/2 tsp salt
1 cup brown sugar
1 cup white sugar
3/4 cup flour
2 teaspoon cinnamon (i added more after I put in the initial 1/2 tbsp)
3/4 tsp nutmeg
3 tbsp rum (optional)
1 tbsp vanilla
1 tsp lemon juice
2 eggs
1 cup evaporated milk

Bake at 350 F

Collard Greens
Ingredients
3-4 large bunches of collard greens
2 lb smoked turkey wings
6 slices bacon (optional, can use butter and olive oil instead)
1 large onion
4 cloves garlic
1/2 tsp smoked paprika
1/2 - 1 tsp pepper
1/2 tbsp better than bouillon
1 tbsp chicken bouillon (adjust to taste depending on desired salt)
1 tsp onion powder
1 tsp garlic powder
1/2 tbsp hot sauce
1/4 tsp red chilli flakes
1 tsp honey or sugar (adjust depending on how bitter the greens are)
1 tsp apple cider vinegar
