Sambal Stuffed Scad Fish is a recipe that has its presence annexed to the Malay kingdom’s ‘Sambal Cencaru’ and the Nyonya’s ‘Hu Chni Rempah’ popularly found in this region, the difference being a little twist to the ingredients induced into the pelvis and dorsal spine of this species of pelagic fish, but it is not as dry as the popular ones. Hence, the taste is spicy yet sweet and aromatic without the overwhelming bite of the shrimp paste some may not get used to. Typically enjoyed with rice as staple, this is an exciting way to serve scad fish alongside other simple side dishes like ‘Ulam’.
