Looking back I understand why grandma taught me this recipe. Because it is so simple and you don't need a mixer. Therefore I could help. You can do it all by hand, plus the fact I get to break three eggs! I loved breaking eggs and watching eggs get broken when I was little. I remember, I would climb onto the counter to help mom break eggs or stand on a step stool and watch mom break the eggs. I may have even had a temper tantrum or two, if I did get to break the eggs. Ok, I was a three year old with an egg fetish. There. I admit it I have an egg fetish. Lol.. Anyway this cake is awesome. I like making it in the winter because it make the house smell like fall, like a sunny day in an apple orchard. So when it is overcast and cold outside it cheers me up a little bit. Just make it.

Preheat Oven to 350°. Butter and line two loaf pans with parchment paper.

Crumb Topping:
Blend together 3/4 cup oatmeal, 1/3 cup brown sugar, 3 tablespoons flour, 3/4 teaspoon cinnamon and 4 tablespoons butter. Set aside.

Cake:
Whisk together 3/4 cup canola oil with 2 cups sugar and 3 eggs. Then mix in 1/2 cup buttermilk and 2 cups applesauce. Lastly add in 3 cups flour, 2 teaspoons cinnamon, 1 teaspoon baking soda 1/2 teaspoon salt and 1/4 teaspoon baking powder. Mix well. Pour equally into each each loaf pan. Top with the crumb topping and back for 70 minutes. Let cool before cutting and serving.
