These are amazing energy balls and can be decorated so nicely for Easter 🐣

Recipe

[x] 60 grams of carrots
[x] 25 grams of walnuts
[x] 40 grams of (gluten-free) oats
[x] 50 grams of dates
[x] 18 grams of Cashewbutter
[x] 1 tsp of cinnamon
[x] 1 tsp of vanilla extract
[x] Optional: orange zest
[x] Optional Nutmeg & ginger
[x] 1-2 tsp of water

[x] 100 grams of white (vegan) chocolate
[x] 10-15 grams of shredded coconut

1. Transfer the carrots, walnuts, oats and dates to a blender and mix until you have fine pieces. Add the remaining ingredients and combine everything.
2. Form balls out of this and set aside. Form little triangles and cover with shredded coconut.
3. Melt the chocolate over a double boiler or in the microwave.
4. Add one carrot cake ball on top of another. Top with melted chocolate.
5. Add the ears after 1-2 minutes, so these stay in their position.


Keep these in the fridge for up to 5 days.
