The main difference between the salt crystals and pellets is how they are made.

Salt crystals are made from evaporating salt water. The solution is exposed to the sun and wind to evaporate until it leaves behind a layer of natural salt crystals. On the other hand, salt pellets are made from compacting small salt granules into a large pellet. Therefore, Salt pellets are more processed than crystals.
