These easy pickled jalapenos will keep for weeks in the refridgerator. These pickled jalapeños include carrots and onions for a really nice escabeche. These are far superior to canned jalapeños from the grocery store. They stay firm and have a great taste, they are also very easy to make. So give it a go. 3Tbls vegetable oil
5 garlic cloves peeled and smashed
1/2 medium onion cut into 1/4 inch slices
1 large carrot peeled and cut into 1/4 inch slices on the bias
6 to 8 large or 12 medium jalapeno chilies
1 cup apple cider vinegar
1 cup water
2 or 3 bay leaves
1/2 tsp coarsely ground black pepper
1/2 tsp dry thyme
1/2 tsp dry Mexican oregano
1 generous tsp kosher salt
