Today we are cooking one hour ribs.

1 Slab of Ribs
1/8 cup of Olive oil
Kosmos Q Texas Beef Rub
Kosmos Q Dirty Bird Rub
Old Mule BBQ Sauce

Remove membrane off the back of the ribs. Rinse with water and pat dry. Rub the olive oil onto both sides. Add a light coat of the Texas Beef Rub and a heavier coat of the Dirty Bird rub to both sided. Cook over direct heat for 15 mins on each side. Then cover with foil and cook an additional 30 mins over direct heat. Check to see that the meat is pulling away from the bones. According to USDA, ribs are "done" when they are 145°F internal temp, but they may still be tough. If you take them up to 190 to 203°F, the collagens and fats melt at this temp and make the meat more tender and juicy. Take the ribs out of foil baste with bbq sauce and put back over direct long enough to caramelize the sauce. Let them rest for 5 minutes before cutting. Enjoy and God Bless!!!
