Creamy chicken cheese sandwich with melted cheese oozing out from every corner *YUM*. Try this versatile chicken sandwich that can be made without mayo and eggs, and works for a quick meal at any time of the day. Make it even more simple by using rotisserie chicken or leftover chicken. Or amp it up by using Brioche or any other special bread. This recipe is just perfect for a quick weekday dinner or a filling office or school lunch.

The filling I used for these sandwiches/paninis is particularly great. It can easily be adjusted as per one's liking. Alter the spices or add more veggies like bell peppers, corns, etc. Not only is it fast and versatile but extremely multi-purpose too!

3. Chicken Cheese Naan - Just swap the filling with a thicker version of this

Ingredients - Makes 4 sandwiches
- 250gm Chicken - Boiled or Grilled & then Roughly chopped
- 1 medium-small onion - chopped
- 2 tbsp Butter
- 2 tbsp Flour
- 1/3 to 1/2 cup Milk
- 1/2 tsp Black Pepper Powder
- 1/2 tsp Salt
- 1/2 cup Mozzarella Cheese
- 1/4 tsp Red Chilli Flakes - Add more or skip
- 1/2 tbsp Chives or Green Onion Shoot - Optional
- 8 slices of bread of choice
- Cheese Slices or Shredded Cheese of Choice - I used Mozzarella & Swiss - Cheese Slices
