Recipe

Ingredients saffron rice

2 cups basmati rice
200ml of chicken stock (I know I said 350 in the video but I didn't use it all)
3 tbsp butter
3 shallots, finely diced
3 tbsp olive oil
200mg saffron
3 tbsp boiling water

method

1. Start by washing your rice under cold water until the water starts to run clearer. Cover the rice with fresh water and leave to soak for 20 minutes to 6 hours.
2. Drain the soaked rice off. In a large pot of boiling salted water, blanch your rice for 3-4 minutes or just until it starts to cook, you do not want to cook the rice completely at this point.
3. After this, drain the rice.
4. In a large heavy-based pot you have the lid for, heat up your olive oil and sweat off your shallots with a little bit of salt, be careful not to get colour - you just want them to go translucent.
5. In a mortar and pestle, grind your saffron with some rock salt to a powder and add the boiling water. Stir this into your warm chicken stock.
6. Add the rice to the shallots and stir through. Level out the rice and place 5 -7 holes almost to the bottom to let steam escape.
7. Add 3 knobs of butter to the pot and the chicken stock.
8. Cover with a lid that's wrapped in a tea towel and cook on medium-low heat for 25 minutes.
9. After the 25 minutes, turn the heat off but don't lift the lid just yet, let the rice rest for 15 more minutes.

Lobster

One raw lobster
1 clove of garlic
1 lemon zested
1 tsp celery salt
3 tbsp butter

1. Start by cutting your lobster in half right down the middle, if your lobster is still alive make sure you place it in the freezer for 30 minutes to an hour before to make him go 'nie nies'.
2. Preheat your pizza oven to 400°c (if you don't have a pizza oven turn your oven on to full and preheat for at least 30 minutes).
3. Place your split lobster on a tray that's suitable for the pizza oven or normal oven, and evenly spread over the butter followed by the lemon zest, grated garlic and celery salt.
4. Put in the oven for 10-12 minutes turning halfway, you really want to make sure you don't overcook the lobster as they can dry out quickly.
5. Serve the saffron rice in the dish that you cooked the lobster in and garnish with some fresh herbs, lemon and roasted tomatoes. Enjoy!
