It’s my first video, be gentle.

Full ingredient list:

1/2 cup chopped celery
1 cup chopped carrots
6 red potatoes [halved]
4 diced garlic cloves
1 red onion [roughly chopped]
2 tbsp.: oregano [dried]
2 tbsp.: basil [dried]
2 tbsp: thyme [dried]
1/4 cup parsley leaves [fresh]
2 pints beer [red ale]
2 cups chicken stock
2 tbsp. apple cider vinegar
1 tbsp worcestershire sauce
8 tbsp bacon fat/lard/butter
8 tbsp flour
1.5-2.0 lb. chuck roast [cut into 2” chunks]

If you’d like to use bison in place of chuck:

replace beer with red wine
replace parsley with rosemary
replace apple cider vinegar with 1 cup apple cider
add 1 tbsp. of tomato paste to sautéed veg
cook an additional 20 minutes with the lid off (for a total of 4 hours)

Venison:

add 1 tbsp of powdered sugar in place of flour
add 1 tbsp of tomato paste to sautéed veg.
