So here’s the deal — I signed up for Smoke on the Orchard, a real-deal KCBS-sanctioned BBQ event happening in Fredericton. That means turn-in boxes, strict judging, and some of the best pitmasters around.

Am I ready? Absolutely not.
Am I excited? 100% yes.

I’ve been practicing my chicken recipe like crazy, trying to figure out what works, what doesn’t, and how to get that perfect bite KCBS judges expect. It’s a learning curve for sure, but honestly, it’s been a blast. There’s something really fun about dialing in techniques, testing different glazes, and trying to cook to competition standards — not just backyard BBQ.

This is a sneak peek at my messy, delicious test runs. Hopefully by the weekend I’ll have something that won’t get disqualified. 😂
