Oven rest at 150 for 4 hours
Temp controlled by Fireboard
Temp Brisket monitored with Combustion_Inc
Seasoned with Salt, Pepper, Ant's BBQ Crack Lawrys
Smoked with Jealous Devil and red oak chuncks
Lessons learned:
Overcooked and dry. Too much fat rendered out of the brisket interior. Exterior fat render was excellent and very tacky. Smoke flavor was good. Next time I will probably smoke at 275.
