Today I'll be breaking down a Wild Venison Pho.
Traditionally when you think of Pho you think of beef - not Venison.
Would it even work? How does it taste? Those were my exact thoughts when I embarked on this experimental batch of Pho using wild Venison caught by fellow subscriber on the channel Luke.

Ingredient List in this video:

- Venison bones (950 grams)
- Venison tenderloin (200 grams)
- Leighton Seasoning Powder (LSP) available at www.phoqueue.com.au/shop

Create base @ 1:1
1) Roast venison bones in oven until golden brown
2) Transfer to pot
3) ADD two litres
4) Simmer on low heat for 6 hours or until finish volume is 950mL

Blending Method
1) Using 500mL of base transfer to small pot
2) ADD 3.4g of salt (2 x 1/4 teaspoon)
3) ADD 10g rock salt
4) ADD 2g LSP (2 x 1/4 teapsoon)
5) ADD 2.7g fish sauce (2 x 1/4 teaspoon)
6) ADD 2 pieces of star anise
7) ADD small piece of cinnamon
8) Scaleup recipe to suit using ratio table in video
