This Jambalaya is on a totally different level. Cooking the "trinity" in that roux creates a deep complex flavor that can't be described. Cook this and you'll see why Louisiana is so greatly respected when it comes to food.

The Roux -
1/2 cup plus 2 tbsp. grapeseed/canola oil
1/2 cup whole wheat flour
Other Ingredients -
1 1/2 pounds chopped chicken thighs (boneless)
6 cups low sodium chicken stock
2 cups Long Grain Brown Rice
1 tbsp. Real Butter
1 pound Italian chicken sausage
2 ribs celery chopped small
1 cup green onions
1 medium onion chopped small
1 medium bell pepper chopped small
1/4 cup minced garlic
1/2 tsp cayenne powder
