Vegan Mandakki Oggarne (puffed rice recipe)

Ingredients -

Puffed rice, chopped onions, tomatoes, green chillies, curry leaves, coriander leaves, pink salt, tumeric powder, ground nut oil, mustard seeds, cumin seeds, groundnuts, fried gram powder, tamarind juice, a dash of jaggery or brown sugar, garlic ginger paste.

In a hot wok, pour 2 or 3 spoons of groundnut oil for tempering, add mustard seeds, after it pops up, add in tea spoon of cumin seeds, then add in green chillies, curry leaves, and fry well, add in chopped onions, fry until it becomes transluent and then add in tomatoes, add in 1 - 2 teaspoon of garlic ginger paste, add a spoon of pink salt for tempering, fry well , after it leaves its flavour, pour in tamarind juice, add in coriander leaves, sprinkle a dash of demarara brown sugar or jaggery, add in pink salt as per your taste if required and let it cook for sometime until it thickens.

Meanwhile, take a bowl of water, soak the required puffed rice in the water for 3 to 5 minutes, squeeze, drain the excess water from puffed rice, and put it into a separate bowl

After that, once the onion tomato thick gravy is ready, mix the puffed rice and then add in 2 - 3 spoons of fried gram powder ( grind the fried gram & make a fine powder )
Add the remaining coriander leaves and garnish with fried groundnuts.
