=== 🍽🍸🥩 RECIPE ===
16 ounces (454g) tortellini, cooked per package directions
1/2 large red onion, sliced
1 stalk celery, sliced
6 ounces (170g) black olives, sliced
1 pint grape tomatoes, cut in half
4 ounces (113g) dry salami, diced
4 ounces (113g) sharp provolone cheese, crumbled

Roasted Garlic Vinaigrette
1 head roasted garlic
1/2 teaspoon dried basil
1 tablespoon honey
1 egg yolk (or 1 teaspoon Dijon mustard or mayonnaise)
3 ounces (90ml) red wine vinegar
4 ounces (120ml) extra virgin olive oil
Salt & Pepper

In a bowl combine the garlic, basil, honey, egg yolk, vinegar and salt & pepper. Whisk to combine. Then while whisking constantly, slowly add the olive oil. Can also be made in a blender or food processor, or an immersion blender.

To assemble the salad, add all ingredients to a large bowl, dress right before serving, and mix well.
