Tender, meaty and on a budget. This cut of beef worth trying. It's becoming one of my absolute favorite. Give it a try.
You will need:
3 pounds/ 6 pieces top blade boneless beef short ribs
1 onion/ 200 g
15 carrots 7 for the dicing and 8 to top the dish
4 stalks of celery
6 cloves of garlic
small bouquet of fresh oregano
10 oz. red drinking wine
salt and pepper to taste
3 tbsp vegetable oil or butter
2 tbsp olive oil
2 tbsp tomato paste
2 tbsp all purpose flour
2 1/4 cups of beef stock/ add a little more if needed.
Preparation:
Prep the meat and add salt and black pepper to both sides of the meat. Place on a kitchen paper towel and let it come to room temperature before cooking.
Sear on high heat until a color develops on all sides. Remove from the heat and finish searing the whole amount.
Add more oil or butter if needed then the veggies/ "celery, onion and 7 of the carrots". Cook on medium heat for 5 minutes, add the garlic.Deglaze pan with wine and let cook for a minutes before adding the tomato paste followed by the flour. Make sure you're whisking at all times. Add the beef sock and let come back to a boil.
Add the oregano and the rest of the carrots. Adjust the salt and pepper, cover and let it cook for 3 hours low and slow or place in the oven at 350°f for 3 hours. enjoy!
