Shrimp Dumplings: yields 9 dozen
3 lb shrimp chopped into small pieces
5 cups green cabbage finely minced
10 dried shiitake mushrooms - rehydrate in hot water for 15 minutes
4 stalks celery finely minced
6 green onions
3 tbsp grated ginger
3 tsp sesame oil
3 tsp mirin
2 tsp white pepper

Steam-fried Dumplings (Potstickers)

Heat a couple tablespoons of vegetable oil to coat the bottom of a non-stick or cast-iron skillet over medium-high heat until shimmering. Add the frozen dumplings (no need to thaw) in a single layer and cook until an even deep golden brown crispy bottom forms, about 1-2 minutes. Occasionally swirl the dumplings around the pan to prevent them from sticking to the pan.
Decrease heat to medium-low and add water, about 1 tablespoon per dumpling or covers the base of the dumplings (approximately a quarter of the way up).

Immediately cover with a lid and steam until the dumplings are cooked through, 6-8 minutes. 

Remove the lid and cook, swirling the pan regularly, until the remaining water has evaporated and the dumplings are crisp again. Serve immediately with your favorite dipping sauce!

Steamed Dumplings

Find a bamboo (preferred) or other basket steamer that fits over a saucepan, pot, or wok.
Line the steamer with parchment paper or Napa cabbage leaves. If using parchment paper, poke a few holes in to let the steam come through. Place frozen dumplings in steamer basket, ensuring they’re not touching each other.

Fill your pot or pan with water that is about 1 inch deep and bring to a boil.

Place the steaming basket over the boiling water, cover, and steam for about 10-15 minutes. You will know when the dumplings are ready when the wrappers looks plump and puffed.

Remove basket from stove and immediately serve with your favorite dipping sauces!

Boiled Dumplings

Boil a pot of water (enough so your dumplings can swim around).
Place frozen dumplings in boiling water one at a time. Gently stir.

Wait for water to boil again, add 1 cup of cold water. Gently stir.

Repeat one more time. 

Gently take dumplings out with a sifted spoon and serve with your favorite dipping sauce!
