Preparation time:- 05 minutes
Cooking time:- 30 minutes

Ingredients:-
*************
1 litre full cream milk
1 tbsp ghee
1/2 cup sevai / vermicelli

1/4 tsp cardamom powder
18 gram zindagi stevia powder / to taste
( or 1/2 cup sugar)

Dry fruits:-
----------------
1 tbsp cashew nuts chopped
1 tbsp almonds chopped
1 tbsp pistachio chopped
1 tbsp chironji / charoli / cuddapah almond
6-8 saffron threads

NOTE:- YOU CAN ADD / SKIP / ADJUST DRY FRUITS AS PER YOUR TASTE.

Process:-
**********
1. Heat milk until 1 boil on high flame.
2. Meanwhile, heat ghee in a kadai on other gas on low flame.
3. Now, Add sevai in it. Roast it until it turns out aromatic around 2-3 minutes on low flame.
4. Transfer it in a plate to avoid over roasting /burning.
5. When milk boils nicely, add sevai in it. Cook it until 1 boil on high flame by continuously stirring it to prevent splitting of milk.
6. Cook it until it reduces to 3/4th & sevai turns out soft n puffy on low flame by occasionally stirring it.
7. Add dry fruits in it when it reduces to 3/4th.
8. Cook it until it's consistency sets as per your taste on low flame by occasionally stirring it. Don't forget to scrap malai from the sides & blend it into the kheer every 4-5 minutes to get thick & delicious kheer.
9. Add cardamom powder & mix it well. switch off the gas & add Zindagi Stevia powder in it. Mix it well.
10. Take it out in a serving bowl. Garnish with dry fruits. Serve it hot or cold as per your preference.

Serves 4-5
