Festive season is in and Diwali is just around the corner. celebrate Diwali with this amazing, super delicious and mouth watering Paneer Tikka recipe. Its unique in taste unlike other Paneer curries. It is without Onion and Garlic and is best to be enjoyed during festive season. Do try this recipe.

INGREDIENTS
For Paneer Tikka Marination
3 tbsp Hung curd
2 tbsp chickpea flour (Besan)
Salt as per taste
¼ tsp Back salt
¼ tsp roasted cumin powder
¼ tsp turmeric powder
1 tsp coriander powder
¼ tsp black pepper powder
¼ tsp red chilli powder
2tsp Kashmiri red chilli powder( to enhance colour)
1 tsp chaat masala
2 tbsp lukewarm mustard oil(necessary)
2 tsp Kashmiri red chilli powder in mustard oil
Essentials
250 gms Cottage cheese/ Paneer
250 red, green and yellow bell peppers


For Gravy 1
2 tbsp mustard oil
Cumin seeds
Star anise
2 dried red chillies
2 green cardamoms
1 black cardamom
A small piece of javentri
A small piece of cinnamon stick
4-5 Cloves
7-8 Black pepper corns
2 medium sized chopped tomatoes
A pinch of salt and turmeric powder to make tomatoes soggy
Some coriander stem (fresh)
3-inch ginger
A cup of water
10-12 cashews


For Gravy 2
2 tbsp refined oil
¼ tsp cumin seeds
1tsp dry fenugreek leaves (Kasoori methi)
1 chopped tomato
Some chilli flakes
1 tsp coriander powder
A pinch of asafetida
3-4 slit green chillies
2 cups warm water
1 tsp lemon juice


Method of preparation:
Marinate the paneer and vegetables for at-least 30 mins but for good result keep it for 1 hour.
Prepare gravy 1 using all the ingredients mentioned above under gravy 1. Let it cool down completely and make a paste out of it.
Now roast the paneer from all the sides either using a skewer or on a pan like I did. Similarly roast the marinated bell peppers as well.
Now prepare gravy 2, using all the above-mentioned ingredients under Gravy 2. Let the gravy boiled for about 12-15 mins on slow flame. Now transfer roasted paneer tikka and bell peppers into the gravy.
Cover the lid and let it cook for 5 mins on very slow flame. The recipe is ready to be served.
