Simple lamb stew

寒冬羊肉湯(蘿蔔羊肉湯)

材料:
羊肉2磅
蘿蔔2個
薑4小舊
紹興酒
蔥1條
芫荽1棵
辣椒仔2隻
蒜頭6粒
乾蔥頭1粒

處理:
1. 大火在鑊中煲滾1鑊水。
2. 薑,洗乾淨,拍鬆。
3. 水滾,放羊腩,加入薑2小舊、蔥及紹興酒1湯匙,滾2分鐘。
4. 倒去鑊中的水,清水洗淨羊肉,剪刀剪去脂肪。
5. 蘿蔔,去皮,切一舊舊。

烹調:
1. 大火在鑊中加入油1湯匙。
2. 放羊肉,炒3分鐘,去羊脂。
3. 加入薑,繼續炒至羊脂除去。
4. 加入滾水,蓋過羊肉,大火滾起,轉中慢火,炆40分鐘。
5. 炆了10分鐘,撈起湯上面的油分。
6. 芫荽,洗淨,切粒,保留尾段。
7. 蒜頭,去皮,切碎。
辣椒仔,切粒。
乾蔥頭,去皮,切片。
這3種材料,放碗內,加入生抽2湯匙。
8. 羊肉已炆了40分鐘,檢查一下,是否已炆腍。
9. 轉大火,加入蘿蔔。
10. 加入調味料:
a. 胡椒粉少許
b. 鹽少許
大火滾起後,轉中火,再炆20分鐘,炆腍蘿蔔。
11. 完成,倒入大碗中,可享用。

Simple lamb stew

Ingredients:
Lamb meat 2 lbs
White radish 2 Nos.
Ginger (small) 4 Nos.
Shaoxing wine
Green onion 1 No.
Coriander 1 No.
Chili 2 Nos.
Garlics 6 Nos.
Shallot 1 No.

Preparation:
1. Heat up a wok of water at high flame.
2. Ginger, get it rinsed. Divide it into 2 shares. Beat well.
3. Water boils up, put lamb meat. Put ginger 2 Nos, green onion and Shaoxing wine 1 tbsp, soak for 2 minutes.
4. Pour away water in wok. Rinse the lamb meat, cut the fat on meat with a pair of scissors.
5. White radish, get it peeled. Dice in cubes.

Steps:
1. Heat up oil 1 tbsp at high flame in wok.
2. Put lamb meat, fry for 3 meat to remove the fat on it.
3. Put ginger, continue frying to release the fat on lamb.
4. Put boiled~up water just covering up the lamb. Heat up at high flame, turn to medium~low flame, braise for 40 minutes.
5. Have already been braised for 10 minutes, remove the fat on top of soup.
6. Coriander, get it rinsed and diced, retain the end of it.
7. Garlics, get it peeled, chop well.
Chili, get it diced.
Shallot, get it peeled and sliced.
These 3 ingredients are to be put in a bowl. Mix well with light soya sauce 2 tbsp.
8. Lamb has been braised for 40 minutes, check if it is soft enough.
9. Turn to high flame, put white radish.
10. Add seasoning:
a. Pepper little
b. Salt little
Heat up at high flame. Turn to medium flame after boils up. Braise for 20 minutes more to cook the radish become soft.
11. Complete. Pour into a big bowl. Serve.
