Ingredients:

1/3 cup mustard oil
1 teaspoon cumin seeds
5-6 cloves garlic, chopped
2 medium onions, chopped
4-5 dried red chilies
4-5 green chilies, chopped
500 grams potatoes, peeled and diced
1 teaspoon ginger paste
1/4 teaspoon turmeric powder
1 teaspoon red chili powder
2 medium tomatoes, chopped
1 teaspoon salt
1 teaspoon coriander powder
500 grams spinach, chopped
1/2 teaspoon garam masala
1 teaspoon kasuri methi (dried fenugreek leaves)
Instructions:

Start by heating 1/3 cup of mustard oil in a pan over medium heat.
Once the oil is hot, add 1 teaspoon of cumin seeds and allow them to crackle.
Add 5-6 chopped garlic cloves and sauté for about 1 minute until the garlic becomes fragrant and starts to brown.
Add 2 chopped medium onions to the pan and fry for about 6 minutes, stirring often until the onions become soft and translucent.
Add 4-5 dried red chilies and 4-5 chopped green chilies, cooking the mixture for another 2 minutes.
Add 500 grams of diced potatoes to the pan, stirring well to coat the potatoes with the spices. Cook for 4-5 minutes on medium heat.
Stir in 1 teaspoon of ginger paste, 1/4 teaspoon of turmeric powder, and 1 teaspoon of red chili powder. Cook for 3-4 minutes, allowing the spices to infuse the potatoes.
Add 2 chopped medium tomatoes, 1 teaspoon of salt, and 1 teaspoon of coriander powder. Stir everything together, then cover the pan and cook on low heat for 5 minutes.
Uncover the pan and add 500 grams of chopped spinach. Mix well, cover again, and cook for 5 more minutes until the spinach is tender.
Uncover and add 1/2 teaspoon of garam masala and 1 teaspoon of kasuri methi. Cook for another 3-4 minutes on medium to low heat, stirring occasionally.
Mix well and serve the dish hot.
