I got my family hooked on having pav bhaji with toasted sourdough bread instead of soft dinner rolls, trust me its amazing!!

// INGREDIENTS //
Cook Veggies:
- 2 medium gold potatoes, peeled and quartered
- 1 cup cauliflower florets
- 1 bell pepper, diced
- 1/2 cup carrots, chopped
- 1/4 cup peas
- 2 baby beets, quartered (mine were already cooked - also optional but will give you a great color)
- 1 cup water (if using pressure cooker)
- 1 tsp salt

Cook Aromatics:
- 2 tsp EVOO
- 1 small red onion, finely diced (reserve some for topping)
- 1inch ginger, grated
- 5 garlic cloves, minced
- 3 green chilis (+/- or eliminate)
- Salt to taste
- 2 tsp kashmiri red chili powder (this red chili is mild in heat so +/- to taste)
- 1.5 tbsp pav bhaji masala (add more if it looks like you have more veggies!)
- 2 large tomatoes, diced
- Generous amount of unsalted butter
- Juice of 1 lime
- Dried fenugreek leaves (aka kasuri methi - optional)
- Chopped cilantro

// RECIPE //
1️⃣ Cook your veggies until soft. You can boil, steam, or pressure cook. I used a Mealthy Multipot (similar to an Instant Pot) and my pressure cook settings were on sealing, High, Quick Release, 7 minutes and added a cup of water and a tsp of salt.
2️⃣ Once cooked, mash everything with a potato masher. Optional: I like to roughly mash and then go in with an immersion blender to get it a bit less chunky and it's also faster.
3️⃣ To a small pan, add EVOO & onions and saute until translucent.
4️⃣ Then add ginger, garlic, green chilies, and salt to taste. Cook for about 2 min.
5️⃣ Add spices. Mix and cook for a min.
6️⃣ Add tomatoes and cook for a few min until the tomatoes are very soft and the raw smell of the spices goes away.
7️⃣ Add the mixture to your mashed veggies. If your bhaji is looking a bit thick and dry depending on how you cooked your veggies, add some water.
8️⃣ On low heat, cook for a couple min. Add a generous amount of butter and lime juice. Top with dried fenugreek leaves if using, and chopped cilantro.
9️⃣ Mix well, taste, and adjust salt. Enjoy with warm pav (bread) and extra onions!
