Throughout the years, this Finnish savory pastry recipe has gone through various changes. The most common version of the pasty today has a rice porridge filling, with a standard topping being a mixture of hard-boiled eggs with butter.

Pre-dating the rice porridge version of the pasty, was a version that used potatoes as the filling. This video also shows what the pastries look like with mashed potatoes as the filling.

Finally, my family enjoys adding a little cheese on top to change it up a bit, but that is optional, and is not considered a part of the traditional recipe.

Pastry Ingredients:
1 cup All Purpose Flour
2 cups Rye Flour
1 tsp Salt
1 cup Water
1-2 tbsps Melted Butter (to brush after baking)

Rice Porridge Ingredients:
1/2 cup Risotto Rice
1 cup Water
1 tsp Salt
1 cup Milk

Egg Topping Ingredients:
4 Hard-Boiled Eggs
1-2 tbsps Melted Butter
1/2 tsp Salt

Alternate Options:
Shredded Cheese
Mashed Potatoes
