Instant Masala Dosa & Sambar I बिना दाल चावल भिगोये सांबर डोसा बनाएं मिंटो में I Pankaj Bhadouria

If you think Making Masala Dosa and Sambar at home is a tedious and time consuming job, think again!
Sharing here a recipe of Instant Masala Dosa & Sambar that you can make in 30 minutes only!
You do not need to soak any rice or dal to make this Instant Masala Dosa, and while the dosa preparations are being made, the sambar also gets ready in a jiffy.
I have made a Masala dosa with a potato stuffing today.

Instant Masala Dosa & Sambar
Preparation time: 15 minutes
Cooking time: 15 minutes
Serves: 3-4

Ingredients:
For the dosa batter:
1 cup rice flour
¼ cup rava
½ cup urad dal atta
¼ cup yoghurt
1 + ½ cup water or as required
Salt to taste
1 tsp sugar
½ tsp baking soda
Oil for roasting
For the potato filling:
4 large boiled potatoes
2 Onions
2 green chilies
8-10 garlic cloves
2” ginger
2 tbsp oil
1 tsp mustard seeds
2-3 red chillies
¼ tsp hing
1 tsp chana dal
1 tsp urad dal
8-10 curry leaves
Salt to taste
½ tsp turmeric powder
For the Sambar:
1 cup toor dar (arhar)
2 tbsp oil
1 tbsp mustard seeds
2-3 red chillies
¼ tsp hing
1 tsp chana dal
1 tsp urad dal
8-10 curry leaves
2 sliced onions
1 carrot
1 brinjal
200g pumpkin
2 Drumsticks
2 tbsp sambar masala
¼ cup imli pulp
Salt to taste
For tempering:
2 tbsp oil
½ tsp mustard seeds
2-3 red chilies
¼ tsp hing

Method:
For the dosa batter:
Blend together all the ingredients for the dosa batter except the baking soda and rest for 10 minutes. Add the baking soda and rest for 2 minutes. Batter is ready.
For the filling:
Heat oil in a pan. Add the mustard seeds, red chillies, hing, chana dal, urad dal, curry leaves. Sauté till golden. Add the chopped onions, ginger, green chilies and sauté. Add boiled potatoes, turmeric, ½ cup water, salt to taste and mix well. Cook for 2-3 minutes and remove from heat.
Spread a ladle full of the dosa batter in a circular motion on the dosa tawa. Allow to cook on medium heat till it starts turning crisp. Add a tsp of oil or ghee to the dosa.
Now place some potato stuffing and spread over the dosa. Fold the dosa and serve with the sambar.
For the sambar:
Cook the washed dal with 3 cups water, ½ tsp turmeric powder, salt to taste.
Heat oil in a pan. Add the Add the mustard seeds, red chillies, hing, chana dal, urad dal, curry leaves. Sauté till golden. Add the diced vegetables, sambar masala, salt to taste and cook till the vegetables are tender. Add the cooked dal, 2 cups water, imli pulp and bring to a boil. Simmer for 3-4 minutes.
Pour the final tempering on top and serve.
