Restaurant style chicken manchurian
1 kg boneless chicken thighs
For chicken marinade
3 tbs garlic
3 medium size ginger
20 shallots
1 tbs soya sauce
3 tbs water
1 tsp k chilly powder
1 tsp pepper powder
Cornflour 4 tbs
Grind this to fine paste( except cornflour )and reserve 2 tbs of this for gravy and rest all to the chicken and marinate for 30 minutes
For sauce
3 finely chopped red chilies
1 tbs oyster sauce
2 tbs soya sauce ( dark )
1 tbs vinegar
1 tbs sugar ( 1 to 11/2 )
1 tsp k chilli powder
Tomato paste 3 tbs ( if u don’t get tomato paste u can boil tomato puree( which u get in the supermarket s )and once it is thickened u can add to the sauce
1 tsp cornstarch
Mix all together and keep aside
Method
Add cornflour to the marinated chicken just before frying . Fry the chicken for 5 to 6 mins or until golden brown. Now in a Kadai add oil then add reserved ginger, garlic, onion paste saute for a minute on low flame and add chopped red pepper .then the prepared sauce let it thicken, off the flame and add fried chicken, garnish with coriander leaves
