OpenCore Hackintosh macOS Monterey: Clean Install

Let's move through how to move your existing OpenCore Hackintosh (such as macOS Big Sur), to the latest macOS Monterey. We will use a separate disk so as not to be destructive of the original macOS.

Data should be able to be restored from the previous version's Time Machine backup, but it may be wise to re-install the applications you need to keep everything nice and clean.
