大廚教你炒高麗菜

辣炒高麗菜
材料
高麗菜 1/2顆(約700~800公克)
蒜片 30公克
辣椒片 30公克
魚露 2大匙
作法
1. 熱鍋,倒入2大匙油。
2. 放入蒜片、辣椒片爆香。
3. 再放入高麗菜炒勻。
4. 放入魚露翻炒幾下,蓋上鍋蓋以大火燜約2分鐘。
5. 開蓋拌勻即可。

Stir-Fried Spicy Cabbage
Ingredients:

1/2 head of cabbage (approximately 700-800 grams)
30 grams of sliced garlic
30 grams of sliced chili peppers
2 tablespoons of fish sauce

Instructions:

Heat a wok and add 2 tablespoons of oil.
Add sliced garlic and chili peppers and stir-fry until fragrant.
Add the cabbage and stir-fry until well mixed.
Add fish sauce and stir-fry for a few more seconds. Cover with a lid and simmer on high heat for about 2 minutes.
Uncover and stir well before serving.

蝦皮炒高麗菜
材料
高麗菜 1/2顆(700~800公克)
蒜片 30公克
蝦皮 30公克
鹽 1/2茶匙
米酒 1大匙
作法
1. 熱鍋,倒入2大匙油。
2. 放入蒜片、蝦皮爆香。
3. 再放入高麗菜炒勻。
4. 加入米酒翻炒幾下,蓋上鍋蓋以大火燜約2分鐘。
5. 開蓋加入鹽拌勻即可。

Stir-fried cabbage with dried shrimp

Ingredients:

1/2 head of cabbage (about 700-800g)
30g garlic, sliced
30g dried shrimp
1/2 tsp salt
1 tbsp rice wine

Directions:

Heat a wok and add 2 tbsp of oil.
Add sliced garlic and dried shrimp, and stir-fry until fragrant.
Add cabbage and stir-fry until evenly coated.
Add rice wine and stir-fry for a few seconds. Cover with a lid and simmer over high heat for about 2 minutes.
Remove the lid, add salt and mix well. Serve.

醬爆高麗菜
材料
高麗菜 1/2顆(700~800公克)
辣豆瓣醬 4大匙
蒜末 30公克
蔥段 30公克
紹興酒 2大匙
作法
1. 熱鍋,倒入2大匙油。
2. 放入辣豆瓣醬、蒜末、蔥段爆香。
3. 再放入高麗菜炒勻。
4. 加入紹興酒翻炒幾下,蓋上鍋蓋以大火燜約2分鐘。
5. 開蓋加入鹽拌勻即可。

Stir-fried Chinese cabbage with spicy sauce

Ingredients:

1/2 head of Chinese cabbage (about 700-800g)
4 tbsp spicy bean paste
30g minced garlic
30g scallions, cut into segments
2 tbsp Shaoxing wine

Instructions:

Heat the wok and add 2 tbsp of oil.
Add spicy bean paste, minced garlic, and scallions and stir-fry until fragrant.
Add Chinese cabbage and stir-fry until even.
Add Shaoxing wine and stir-fry briefly. Cover the wok and simmer for about 2 minutes over high heat.
Open the lid, add salt and mix well. Serve.

蝦醬炒高麗菜
材料
高麗菜 1/2顆(700~800公克)
辣椒末 30公克
蒜末 30公克
蝦醬 2大匙
米酒 2大匙
鹽 1/4茶匙
作法
1. 熱鍋,倒入2大匙油。
2. 放入辣椒末、蒜末爆香,放入蝦醬炒至變香。
3. 再放入高麗菜炒勻。
4. 加入米酒翻炒幾下,蓋上鍋蓋以大火燜約2分鐘。
5. 開蓋加入鹽拌勻即可。

Stir-fried cabbage with shrimp paste

Ingredients:

1/2 head of cabbage (about 700-800g)
30g garlic, sliced
30g chili flakes
2 tbsp shrimp paste
2 tbsp rice wine
1/4 tsp salt

Directions:

Heat a wok or pan and add 2 tbsp of oil.
Add garlic slices and chili flakes and stir-fry until fragrant. Add shrimp paste and stir-fry until aromatic.
Add cabbage and stir-fry until evenly mixed.
Add rice wine and stir-fry for a few seconds, then cover and cook over high heat for about 2 minutes.
Uncover and add salt, then stir-fry until well mixed.
