Surti undhiyu is a winter special recipe made with lots of fresh green and green vegetables. It tastes both sweet and spicy,enjoyed with roti,puri or as is.
INGREDIENTS:
All Measurements is taken from 240ml cup
Step 1:
150gm surti papdi
100gm valor (flat green beans)
pinch of soda
water
Step 2: (Paste)
100gm tuver dana(pigeon beans)
1cup fresh coriander
1cup freshly grated coconut
8-10 green chillies
1tbsp raw peanuts
2tbsp sugar
salt
1/2tsp turmeric powder
1tsp coriander seed powder
1tsp roasted cumin seed powder
1/2tsp dry ginger powder
1/4tsp hing
1tsp garam masala
2tsp white sesame seeds
vegetables for Marination:
1 raw banana
12-15 Tindli (Ivy gourd)
100 gm Dudhi (bottle gourd)
Step 3: (Muthiya)
3/4th cup fresh fenugreek leaves chopped
1tbsp fresh coriander leaves
1tsp green chilli paste
1/2tsp turmeric powder
1/2tsp dry ginger powder
1/4tsp hing
2tsp sugar
1/2cup wheat flour
1/2cup bengal gram flour (besan)
salt
pinch of soda
1tsp lemon juice
water
oil
Step 4: (Assembly)
1/2cup oil
1tsp cumin seeds
1/4tsp hing
1/2tsp carom seeds
1tbsp green chillie paste
soaked valor,surti papdi
salt
2tsp sugar
1 1/2cup water
1/4cup tuver dana
1/4cup green peas
muthiya
fresh coriander
fresh nariyal
