ARABASHI SOUP AND DOUGH RECIPE (Yozgat/Kayseri Style)

I. CHICKEN BROTH & SOUP BASE
Ingredients:
1 Chicken Thigh (skin on)
1 Chicken Breast (skin on)
6 cups Water (for broth)
1 Bay Leaf
2 tbsp Butter
2/3 shot glass Vegetable Oil
2.5 tbsp All-Purpose Flour
1 heaping tbsp Spicy Pepper Paste
1 heaping tbsp Tomato Paste
2 cups Water (or extra chicken broth)
1 tsp Sweet Paprika
1 tsp Hot Red Pepper Flakes
Salt (approx. 1 tsp for boiling chicken + 1/4 tsp for soup, adjust to taste)

Instructions:
1. Boil chicken with 6 cups of water and bay leaf for 1 hour (or 20 mins in a pressure cooker), adding 1 tsp of salt. Skim foam if needed.
2. Remove chicken, shred finely, and reserve broth.
3. In a deep pot, melt butter and oil. Add 2.5 tbsp flour and sauté over low heat for 2-3 minutes until the raw smell is cooked off, but do not brown heavily.

2. Heat 12 cups of water to near boiling in a large pot.
