This is an Indonesian heritage recipe, that traces its roots back to colonial times. It's a rich flavorful cake that is mildly sweet. The recipe itself is also an easy one that beginners need not hesitate in trying.

The star ingredient of this cake is its Spekkoek spice mix. Although it can be bought straight from a grocery store or online, we make it from scratch here.

The Spekkoek spice mix is a combination of 5 powerful spices harmonizing into a fragrant and decadent combination. Each coming from different parts of many plants. Cinnamon is the bark of its tree, cloves come from flower buds, cardamom is the seed inside of a pod, nutmeg is the kernel of a seed, and mace is the crimson colored aril covering the nutmeg seed.

These exotic spices are fused with traditional cake baking to result in this Indonesian spice cake. Enjoy!

Ingredients
SPEKKOEK SPICE MIX
30 gr Cinnamon
6 gr Nutmeg
6 gr Mace
1 gr Cloves
1 gr Java Cardamom (without pod)
(only 1-2 tsp of this mix are used in the cake recipe)

SPICE CAKE
4 - 5 whole eggs (220 g)
1/2 tsp salt (3.0 g)
130 g Cake Flour
130 g Unsalted Butter
130 g Palm Sugar
1 - 2 tsp Spekkoek Spice Mix
2 Makrut Lime Leaves (optional)
