Ingredients:
500 ml milk (lukewarm)
2 tsp vinegar or lime juice
10 gm china grass (agar-agar)
3 tbsp milk
2 tbsp water
2 tsp whey water (from the curdling process)
3/4 cup milk
1/2 tsp salt
1/4 tsp turmeric powder
Butter (for greasing the mold)
Instructions:
Curdle the Milk:
Heat 500 ml of milk in a pan until it is lukewarm. Add 2 teaspoons of vinegar or lime juice to the milk. Stir gently until the milk separates into curds (cream) and whey (watery liquid). Stir well and remove the excess water (whey), setting it aside. This liquid is known as whey water.
Prepare the China Grass Solution:
In a separate pan, add 10 gm of china grass (agar-agar), 3 tbsp milk, and 2 tbsp water. Heat until the china grass dissolves completely, then set it aside.
Make the Cream Cheese:
Add the separated cream (curds) to a mixer. Add 2 teaspoons of the whey water you set aside earlier and blend it into a smooth paste. This is your homemade cream cheese. Make sure there are no lumps.
Combine the Ingredients: In a pan, add the prepared cream cheese, 3/4 cup of milk, and the china grass solution. Mix everything well. Add 1/2 teaspoon of salt and 1/4 teaspoon of turmeric powder for color and seasoning. Mix well and cook on low heat until it thickens. No need to bring it to a boil. Set the Cream Cheese: Once it reaches a thick consistency, grease a mold with butter. Pour the mixture into the mold and smooth it out.
Place the mold in the fridge (not the freezer) for 15-20 minutes to allow it to set. After chilling, take the mold out of the fridge. Once set, cut the cream cheese into slices as required.
