【马来传统糕点】椰糖糯米饼 Kuih Getas

材料:
100克 糯米粉
50克 普通面粉
50克 新鲜白椰丝
120毫升 清水
10克 白糖
少许 盐

糖霜
70克 白糖
30毫升 清水
两片 香兰叶



步骤:
1. 制作面团:将糯米粉、面粉白椰丝糖和少许盐混合在一个大碗中。
1. 慢慢加入水,搅拌均匀。
2. 揉面团约5分钟至不粘手,确保所有材料均匀混合。
3. 将面团分成小份,每份大约20克。
4. 将每份面团揉成球形,再搓长形,然后轻轻压扁成舌头形状。
5. 在锅中倒入足够的油,热油至180度左右。
6. 将面饼放入热油中炸至金黄色并酥脆。每面炸约2-3分钟,直到外皮酥脆。
7. 用漏勺将炸好的糕点捞出,放在吸油纸上沥干多余的油。



2.制作糖浆:
1. 将白糖和水放入小锅中,用中火加热,搅拌至白糖完全溶解并呈现浓稠的糖浆。
2.将炸好的糕点一个个地放入糖浆中,让每个糕点均匀地裹上一层糖浆。然后熄火,继续捞成糖霜
3.等待糖浆冷却和硬化,即可享用


Kuih Getas (Coconut Sugar Glutinous Rice Cakes)

Ingredients:

100g glutinous rice flour
50g all-purpose flour
50g fresh grated coconut
120ml water
10g sugar
A pinch of salt

Sugar Coating:

70g sugar
30ml water
2 pandan leaves

Steps:

Prepare the Dough:
1. In a large bowl, mix glutinous rice flour, all-purpose flour, grated coconut, sugar, and a pinch of salt.
2. Gradually add water, mixing well until combined.
3. Knead the dough for about 5 minutes until it is smooth and not sticky.
4. Divide the dough into small portions, about 20g each.
5. Roll each portion into a ball, then shape into a long form, and gently flatten into an oval shape.
6. Heat enough oil in a pan to 180°C (350°F).
7. Fry the dough pieces until they are golden and crispy, about 2-3 minutes per side.
8. Use a slotted spoon to remove the fried cakes and place them on paper towels to drain excess oil.

Prepare the Sugar Syrup:
1. In a small pot, combine sugar and water, and add the pandan leaves. Heat over medium heat, stirring until the sugar completely dissolves and the syrup thickens.
2. Dip each fried cake into the sugar syrup, ensuring each piece is evenly coated. Then, remove from the heat and allow the sugar to crystallize on the cakes.
3. Wait for the sugar coating to cool and harden before serving.
