Undhiyu OR Oondhiyu is curry of Gujarat made from mix vegetables. Traditional recipe of Undhiyu consists use of lots of vegetables found during winter season and hours of cooking time.
However, many a times it is cumbersome to make such huge preparations and it is not possible all the time. Today I am sharing easy undhiyu recipe with less number of vegetables and undhiyu in cooker. This may also be called one pot undhiyu. This recipe of undhiyu saves lots of time and energy, yet it is so delicious. I have used here all vegetables already at my home and cooked undhiyu in pressure cooker to save time. I hope you would sure like this easy undhiyu recipe to try at home.

INGREDIENTS
Guvar, Tindora, Bottle Gourd, Brinjal, Potatoes, Valor
Random measurements
Bay leaves, Dry red chilli, Cinnamon, Cloves
तेज पत्ता, सुखी लाल मिर्च, दालचीनी, लौंग
Paste of ginger, green chilies, garlic
अदराक, हरी मिर्च, लहसुन की पेस्ट
Roasted white sesame seeds & peanuts (Cushed)
शिके हुए सफ़ेद तिल और मूंगफली के दाने क्रश किए हुए
7 tbsp oil (तेल)
½ tsp mustard seeds (राय)
½ tsp cumin seeds (जीरा)
¼ tsp hing (हिंग)
1 tsp dry coconut powder (सूखे नारियल का पावडर)
1 tsp red chilli powder (लाल मिर्च पावडर)
½ tsp turmeric powder (हल्दी पावडर)
1 tsp coriander cumin powder (धनिया-जीरा पावडर)
¾ tsp garam masala powder (गरम मसाला पावडर)
1.5 glass water (पानी)
1 tsp salt (नमक)
2 tsp sugar (चीनी)
Half a lemon (निम्बू)
Red chilli powder tadka (लाल मिर्च का तडका)
Chopped coriander leaves (हरा धनिया)
FOR MUTHIYA
1 cup besan (बेसन)
Chopped green methi (हरी मेथी)
1 tsp paste of ginger, green chilies
अदरक और हरी मिर्च की पेस्ट
⅛ tsp turmeric powder (हल्दी पावडर)
¼ tsp hing (हिंग)
½ tsp red chilli powder (लाल मिर्च पावडर)
½ tsp garam masala powder (गरम मसाला पावडर)
½ tsp salt (नमक)
1 tsp sugar (चीनी)
⅛ tsp baking soda (बेकिंग सोडा)
1 tsp oil (तेल)
Half a lemon (निम्बू)
Water as required (पानी)
