Poi Ghanta Recipe ( Odia ) | Malabar Spinach Curry Recipe : It is one of the most popular healthy side dish in West-Bengal and Odisha . " Ghanta " means combination of some basic Vegetables and Poi Saga ( Malabar Spinach / Poi Saag ) . Which makes this dish easy and very healthy as this Saag is a nutritious vegetable and a natural coolant. Here I have shown this curry without using Onion garlic and another using an aromatic Masala paste . Must try this healthy and super delicious Poi Ghanta tarakari ( Saag curry / Poi Saag ) in your lunch with Steamed rice or with Water Rice ( Odisha Famous Pakhala ) . Enjoy your meal :)

Ingredients :
1. Malabar Spinach ( Poi Saag / Poi Saga )
3 Palmful ( or 20 fresh Leaves )
2 palmful Poi Danka ( Poi stick )
2. Diced Pumpkin ( Kakharu ) - 2 palmful ( with Skin )
3. Diced Brinjal ( Baigana ). - 2 ( medium )
4. Diced Pottao ( Alu ) - 2 ( medium ) ( with skin )
5. Brown Chickpea ( Chhota buta ) - 1 bowl ( or 100gm )
6. Tomato - 1 ( big )
7. Crushed Ginger ( Ada chhecha ) - 2 inch or 1 tbsp
8. Green Chilli ( Kncha Lanka ) - 3 nos. ( or as required )
9. For Masala Paste ( Onion 2 + Ginger 2 inch + Garlic cloves 8-10 + Dry Red Chilli - 3 nos. )
10. Bay Leaves - 2
11. Roasted ( Cumin + Dry red chilli ) - 1 tbsp
12. Kashmiri Red Chilli powder - 1 tsp
13. Turmeri cpowder - 1 tsp
14. Panch Phoron ( Pancha Phutana ) - 1 tbsp ( combination of mustard seeds + cumin seeds + Fennel seeds ( saunf ) + black cumin + fenugreek seeds ( methi ) )
15. Mustard Oil ( gives great flavour and aroma ) - 3 tbsp
16. Refined Oil - 2 tbsp
17. Salt to taste
