Craving delicious and authentic street food? 👻Try making Kolkata's famous Egg Chicken Roll at home! This mouth-watering snack, also known as Kathi Roll, is a must-try for all foodies. Bursting with juicy chicken and wrapped in a flaky lachha paratha, it's the perfect combination of texture and flavor. Add an egg for an extra indulgent touch. ✨

—-EGG CHICKEN ROLL RECIPE —-
This measurement is for 3 egg chicken rolls

—For Chicken Stir Fry—
Ingredients:
240 gm chicken - cut in small cubes
Powdered Spices: 1/2 tsp turmeric , 1/2 tsp red chilli, 1 tsp kashmiri red chilli, 1 tsp coriander , 1 tsp cumin , 1/2 tsp black pepper and 1/2 tsp garam masala
1 tsp salt
1/2 tbsp ginger garlic paste
1.5 tbsp curd
1 onion - thinly sliced
1/3rd capsicum- thinly sliced
1 tbsp oil for cooking
Cooking:
Marinate the chicken pieces with salt, powdered spices, curd and ginger garlic paste. Rest for 30 minutes
Heat oil and saute the onions till translucent
Add the chicken cubes and saute on a high flame for 2 minutes
Cover and cook on low flame for 7-8 minutes
Remove the lid , toss in the capsicum and cook on high flame for 1 more minute

—For the laccha parantha—
Ingredients:
1.5 cups of maida/all purpose flour
1/2 tsp salt
1/2 tsp sugar
1.5 tbsp oil
1/2 cup luke warm water
3 eggs
6 tbsp oil for frying
1.5 tbsp oil for layering
1 tbsp all purpose flour for layering
Making the dough:
Mix 1.5 cups flour with salt and sugar
Add 1 tbsp oil and mix well
Gradually add the luke warm water and mix till you get a soft dough
Knead for 10-15 minutes
Add 1/2 tbsp oil and knead the oil in for a minute
Rest for 20 minutes
Rolling the paratha:
Divide the dough into 3 parts
Roll it into a circle
Add oil if required for rolling
brush with a small quantity of oil and sprinkle maida on the top
Form pleats and stretch it to make the dough long
Roll it back to a circle and tuck the bottom end in
Make rest of the dough balls
After a rest of 10 minutes , roll back to a circle
Over a hot tawa cook the parantha over a medium flame. 2 minutes on each side
Add oil and cook till you get a light brown patches on one side. whisk and add the egg on this side
Flip and keep cooking till the paranthas are done

—Assembling the Roll—
Ingredients:
Green chilli sauce
Red chilli sauce
Kasundi (Bengali Mustard sauce)
Sliced onions and cucumber
Chopped green chillis
chaat masala
black salt
Preparation:
To one side of the parantha, add 1/3rd of the chicken
Top with the ingredients and sauces mentioned above
Roll it one and the layer with the roll paper then circle it complete and tuck in the bottom
