A homemade recipe that is healthy for your family

[Rice Layer]
Ingredients:
350g Glutinous Rice, soaked for 4 hours
100ml Coconut Milk, freshly squeezed from coconut flesh
100ml water
1 tsp salt
1-2 Pandan Leaves
6-10 Butterfly Pea flowers

Mixture A: Drained Glutinous rice and add Coconut Milk, Water, and Salt.

[Pandan Layer]
10 Pandan Leaves
200 ml water
3 Eggs
120g White Sugar
25g Plain Flour
20g Corn Flour
1/4 tsp Salt
150ml Coconut Milk, freshly squeezed from coconut flesh

Mixture B: Plain Flour, Corn Flour, Salt

[Clear Directions]
For the Rice Layer...
1. Soak Glutinous Rice for 4 hours before usage.
2. Mix Coconut Milk, Water, and Salt, and place it aside.
3. Drain Glutinous Rice, and place it on the steaming pan.
4. Pour Step 2's mixture into the steaming pan, this is Mixture A.
5. Add 1-2 Pandan leaves into the steaming pan and steam over medium heat for 25 Mins, or until cooked. (We used a pressure cooker in our video)
6. Remove pandan leaves and use chopsticks to fluff the rice.
7. Spread cooking oil in another steaming pan (using for kueh's shape). Add steamed glutinous rice inside. Press it firmly into the pan.
8. Add Butterfly Pea flowers into 50 -100 ml of water and boil until the colour is out.
9. Drizzle blue coloured water onto Glutinous Rice and steam for 5 mins. This forms the Rice Layer. Leave it in the steamer, with the heat turned off to keep it warm while you prepare the Pandan Layer.

For the Pandan Layer...
1. Blend Pandan leaves and water. Sieve it.
2. In a mixing bowl, add Eggs and White Sugar and mix well.
3. Add Mixture B and mix.
4. Gradually add in Step 1's sieved blended pandan leaves. A little by little.
5. Gradually add in Coconut Milk.
6. Sieve the Mixture and pour it into a pot for boiling.
7. Boil on medium heat while constantly stirring the mixture. When some clumps are formed, immediately turn off the heat.
8. Pour this Pandan Mixture into the Rice Layer. Steam over medium heat for 40 Mins, or until cooked.
9. Once cooked, remove from steamer and leave it aside to cool completely before cutting it. It will take at least 4 hours.
10. Slice and Serve. Enjoy!
