I'm showing you how to make the best homemade gluten-free pizza that's dairy-free and gluten-free! This recipe was tested 5 times before perfection and I'm super pleased to finally share with all of you! You can use the dough recipe and add any toppings as you'd like. Hope you enjoy!

Yeast Mixture:
1 cup lukewarm water (about 110 degrees F)
1 1/4 tsp or 1 packet active dry yeast
1 tbsp honey
1 tbsp fresh lemon juice or apple cider vinegar (helps activate the yeast)
Whisk well to combine the mixture and to activate the yeast. Let it sit aside for about 5-10 minutes until it starts to form bubbles at the top.

Dough Ingredients:
2 cups gluten-free 1:1 baking flour (my favorite is Bob's Red Mill)
1 tsp baking soda
1 tsp salt
1 tbsp olive oil
1 egg (this helps combine the dough really well)
Using a stand mixer is the best way to knead the dough. Use a dough paddle mixer and start on slow speed to mix the dry ingredients together, then slowly start to incorporate the yeast mixture and continue to speed up the mixing. Stop every so often to scrape the sides of the bowl with a spatula and mix at 5-7 speed until the dough becomes sticky and pliable.

Then add 1 tbsp olive oil in a large mixing bowl, and shape the dough into a ball with your hands and coat the ball in the olive oil. Let it sit inside an oven (not turned on) or in a shaded corner of your kitchen with a kitchen towel over it for 30 minutes to rise. In the meantime, make the toppings.

Roasted Sweet Potato Topping:
1 cup diced sweet potato or butternut squash
1/2 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
1 tsp black pepper
1-2 tbsp olive oil
Roast at 400 degrees for 20-25 minutes until fully cooked.

Mushroom Topping:
1 package pre-sliced mushrooms
8 garlic cloves, sliced
1 sprig rosemary, finely chopped
1 tsp onion salt
1 tsp black pepper
1/4 tsp salt
1-2 tbsp olive oil
Sautee the mushrooms in a pan on medium high heat until the mushrooms are fully cooked.

Other toppings:
Pesto
Cheese (regular or dairy free)

Cut the dough into 4 sections and roll into balls. Add the dough in between two parchment papers and using a cutting board or backside of a pan, press your weight down to evenly thin out the pizza dough. You want the dough as thin as possible as it will rise in the oven when baking about 1/4 inch thick. Place on a baking sheet lined with parchment paper. Lightly coat with olive oil. Bake at 425 degrees F for 10 minutes.

Then add the toppings and bake for another 10-15 minutes until golden brown.
