Brown sugar has long been assumed to be the healthy less processed version of white sugar. Unfortunately, like with many of these foods myths it's yet another one that's made with a misunderstanding.

It's believed that brown sugar is inherently less processed and because of that it's "healthy". Sadly for those that believe it, it's actually the opposite. Brown sugar is white sugar whose molasses has been stripped from it and then added back in after it becomes white sugar.

That being said, in this video I'll be covering where sugar comes from, how it's made and what's the realistic differences between baking between the two. I'll also add in the less processed version namely unrefined cane sugar into the mix.

We'll be testing this out on 2 recipes, specifically a meringue and a scone.
