This is a Mangalore -Udupi style biryani prepared in a Degh .
Unique green masala is used in making this biryani .
As it’s cooked in an open pot , used fresh mutton , as it cooks faster. Make sure you use fresh cut mouton when cooking it in an open pot . You can also use pre cooked mutton and add it into this masala . Or you can prepare the masala in a pressure cooker and cook meat along with it , which makes the cooking process quicker .
Adjust chillies and salt accordingly .
In this recipe user 3kg mutton and cups of long grain basmati rice .
Gently wash the rice and soak for 15-20 minutes.
It’s better to keep everything ready before you start cooking .
Ingredients
3kg mutton cut into biryani pieces
6 cups basmati rice .
1 -2 cup oil
1/2 -1 cup pure ghee
10 large onions
6-7 large tomatoes
4 pods of garlic
5 sticks of medium ginger
Whole garam masalas :
Cinnamon sticks , cloves , fennel seeds ,
1 cup Thick yoghurt
10-12 long Green chillies as per spice levels
Mint leaves 1 large bunch
Coriander leaves 2 bunch
Lemon 4
Lemon yellow food colour added into water for drizzling over the rice .
Cashew , raisins
