Recipe Below

1/2 of a medium onion
1 Green Bell pepper
5 pieces of Hickory smoked thick cut bacon or more if you like
2 tbsp tomato paste
3 sprigs of fresh thyme or 1/2 tsp of dried thyme
2 packets of Goya Powdered chicken or Beef bouillon or (one of each)
2 tsp Kitchen Bouquet browning seasoning (This is used for coloring)
1 15.5 oz can of Dried pigeon peas and liquid (Goya is my preferred brand)
2 1/2 cups long grain white rice (uncooked)
3 cups water
Black Pepper to taste

I sometime add a Scotch Bonnet pepper
Cook rice on medium high until most of the liquid is absorbed than turn to low and cook until all the liquid is done.
