“A bowl of delicious snake soup should be made up of a good quality soup base which uses snake bones to make the broth. Secondly, there should be plenty of snake meat. But it shouldn’t be only about the quantity but also the quality. The snake meat needs to be tender and not tough, it shouldn’t be like tree bark, you’ve got to want to eat it and not spit it out.”

“I think there are less and less snake soup shops in Hong Kong. I think young people don’t like snake soup. They just feel afraid of snake meat and I have no doubt that this business will continue to disappear in Hong Kong.”

“A lot of these snake soup shopkeepers feel like young people aren't really as into it for a variety of reasons. And again, SARS and COVID came up as one main reason. But then, you know, there's a variety of other reasons. There's some people that have some issues with or have potential environmental concerns about consuming wild meats, such as snakes and that type of thing. And then some also related it to climatic warming, where the weather is warmer, so people don't feel as cold. They might not want to eat snakes as much. But there's, there's a whole variety of reasons, and it's hard to really pinpoint it to one single one.”

STORYLINE:
For many, snakes might seem scary, but for Chau Ka-ling, they are her friends that provide her with a livelihood.

Preserving the ways of traditional snake soup shops in Hong Kong, Chau Ka-ling keeps her snakes in old-fashioned wooden cabinets and drawers.

Chau gently takes out a snake and puts it under her arms, but soon it starts to try to escape her clutches.

She quickly gets it under control.

Chau runs a family snake soup shop called “Shia Wong Hip” in Cantonese. “Shia Wong” translates to “Snake King”. The shop was set up by her late father in 1965.

It’s in Sham Shui Po, in Hong Kong's Kowloon district, packed with street markets and trendy shops.

Chau took on the family business in 1990s.

Since being taught by her father in the 1970s, Chau has become an expert in catching snakes, removing their fangs, slaughtering and making soup out of them.

Chau has been locally dubbed the city’s “snake queen”.
