There hasn't been as much time to watch trains as normal, but CN seems to still be running a good bit. Unfortunately, rail traffic has dipped a little the past few years, and all of the heritage units have managed to go everywhere but the Memphis area, but there's still enough trains to see on a good day. This video follows CN's Yazoo Subdivision for almost its entirety - trains like Z-194 and Z-195, M301 and M302, A488 and A489, a few autorack trains and coal trains, and of course Amtrak. One of the major events of January was a large amount of snow that fell in North Mississippi, but still allowed for me to drive out and catch a few trains kicking up some snow dust behind them.
