“Thor’s Day Whole Wheat Altar Bread” from Temperance Alden’s “Year of the Witch”

3 cups warm water, 110 degrees
2 packages active dry yeast, 0.25 oz each
2 tablespoons honey plus ⅓ cup honey
5 cups white bread flour
½ cup oatmeal
½ cup dried cherries
½ cup raisins
3 tbsps butter, melted
1 tbsp salt
3 ½ cups whole wheat flour

Preheat the oven to 200 degrees. In a large bowl, mix warm water, yeast and honey. Let that stand for 5 minutes. Add white bread flour, oatmeal, cherries and raisins. Stir to combine. Let the dough sit for 30 minutes or until big and bubbly.

Mix in melted butter, honey, and salt. Stir in 2 cups whole wheat flour. If you have a stand up mixer, use a dough hook until the dough pulls away from the mixing bowl. If you don’t have a mixer or prefer to knead by hand, flour a flat surface and knead the whole wheat flour until the dough is just barely pulling away from the counter.

Once your dough has been kneaded, split it into 2 equal pieces. These are your two loaves. Take the first piece, separate it into 3 equal parts, and roll each section into a long thick strand for braiding. Repeat the braiding process with the second loaf. Place the loaves in a greased baking pan or dish and let rise in a warm oven for about 20 minutes. The loaves should double in size.

Once bread has risen, turn the oven to 350 degrees and set the timer for 25 minutes. When the bread is golden brown, remove from the oven and spread butter all over the warm loaves. Let cool for several minutes before removing from the pan.
