INGREDIENTS

POTATO SALAD
5 large potatoes or sweet potatoes
Oil to grease
Salt to taste
Black pepper to taste
Thyme

THE POTATO DRESSING:
5-7 tbsp mayonnaise
Fresh dill
1 tbsp grainy mustard
1 tsp Dijon mustard
1 tsp Maple syrup or honey -optional
Salt to taste
Black pepper to taste

BEETROOT
5 medium beetroots
Oil to grease
Salt to taste
Black pepper to taste
Thyme
1/3 cup Mrs B fruit chutney, original or with chilly

BEETROOT DRESSING
1/3 cup olive oil
2 tbsp Dijon sauce
2 tbsp maple syrup or honey
2 tbsp white balsamic vinegar
1/4 tsp salt
Black pepper to taste
Zest of half orange or lemon

ROAST CHICKEN
7 chicken pieces
Salt to taste
Black pepper to taste
1-2 tbsp cooking oil
1-2 tbsp chicken spice
1-2 tbsp (smoked) paprika
1-2 tbsp dried parsley
1-2 tbsp garlic powder
1-2 tbsp onion powder
1/4 cup to 1/3 cup smoked BBQ sauce
Fresh thyme

FOR GRAVY: (Apologies forgot to include its clip)
1 tomato, chopped
1 tsp Worcestershire sauce
Salt and pepper if necessary
Add to the gravy from the cast iron and simmer

BUTTERNUT/PUMPKIN
Water to boil
Cinnamon stick/s or ground cinnamon
Salt to taste
Black pepper to taste
1 tbsp sugar or maple syrup optional
2 tbsp butter

CREAMED SPINACH
1/2 medium onion
3 big garlic cloves
Butter to fry
300g fresh spinach
1 tsp dried origanum
Salt to taste
Black pepper to taste
1/2 cup or 125ml heavy cream, 37% fat
Mozzarella cheese to taste
1/4 tsp fresh nutmeg

CHAKALAKA
1/2 large onion
2 medium fresh carrots
1/2 large each bell pepper
3 large garlic cloves
1 1/2 tsp Rajah curry powder
1 tsp dried origanum
3-5 small green chillies
2 tsp smoked paprika
2 tsp fruit chutney -optional
410g baked beans
1 stock cube, veg or chicken
Salt and pepper if necessary

RICE
Long-grain white rice
Whatever cups of rice, double the cups of water + 1 cup
Salt to taste
Dried parsley -optional

MALVA PUDDING
2 tbsp butter, softened + extra for greasing
1/2 cup sugar (caster sugar would be best)
2 tbsp apricot jam
2 large eggs, room temperature
2 tsp vanilla extract or essence
1 1/2 cups cake flour
2 tsp baking powder
1 tsp bicarbonate of soda/baking soda
1/4 tsp salt if butter is unsalted
150ml-250ml milk, lukewarm
1 tsp vinegar
Bake at 180 degrees C, 356 degrees F standard oven, or 160 degrees C conventional oven.

SAUCE:
1 cup fresh full-cream milk
3 tbsp white granulated sugar
3 tbsp butter, salted
1 tsp vanilla extract or essence

CUSTARD or PASTRY CREAM
3 tbsp cornstarch
1/2 cup sugar
3 large or extra large egg yolks
2 tsp vanilla extract or essence
1 cup fresh milk or cream, depending on the consistency
2 tbsp butter, salted
