( For every 1 kg of meat we need one hour of cooking )

Components :

▪ We will need 2 ½ to 3 kg of pork
( My meat for example is 2,750g. bone-in pork neck )
Always choose to cut the meat you buy yourself so that it is the size you want

( I can replace the pure neck with the ratio (1 to 5) that is: 1/2 kg of pork shoulder or pancetta and 2 ½ kg of pork neck ) So that in total we have 3 kg of pork meat. )

** If we can't eat the pork neck. We can choose any piece of pork ( Preferably the front part : Because it is soft ). And add : A small piece of pancetta for the fat

▪ For every 1 kg of pork, we will need 1 teaspoon of vinegar / I added ▪ 3 teaspoons of vinegar

▪ 3 large dry onions - into slices
▪ 2 - 3 large tomatoes - into slices
▪ 6 sweet Florinis peppers - into slices
( Of course we can replace them with 1 yellow, red, green and orange pepper )

Spices, like and garlic, are at will

▪ 1 teaspoon meat spice mix
▪ 1 ½ teaspoon of salt
▪ 1/2 teaspoon black pepper
▪ 1 teaspoon paprika, sweet
▪ 1/4 teaspoon bukovo, Hot
▪ 1/2 teaspoon oregano
▪ and 1 clove of garlic

▪ 150gr of kefalotiri - into cubes
▪ 150gr cephalograviera - into cubes

▪ 100 ml white wine
▪ 100 ml extra virgin olive oil
▪ 1 tablespoon mustard of your choice (mild or hot)

▪ 1 teaspoon of honey
( I can replace the honey with a tablespoon of grape syrup )
▪ Baking paper
▪ Aluminium foil
▪ I add 500 ml of water into the pan

*** If you are afraid of the baking paper opening or tearing, then
you can add two baking papers instead of one, which I added.

**** Carefully open the package in the pan without losing the juices

***** Ideally you can enjoy it as you see it alone with country bread. But you can If you want to accompany it with pilaf, with mash or even with fried potatoes .
