If you love almonds, this Spanish cake will win your heart. And the best part? It’s incredibly easy to make!
From the beautiful region of Asturias, this almond cake is a traditional dessert that’s easy to prepare and absolutely delicious. Similar in spirit to the famous Tarta de Santiago, but with its own character, this recipe combines ground almonds, lemon zest, and just a touch of cognac (optional) for a rich and aromatic flavor. “Would you add the cognac or keep it alcohol-free? 📜 Full Recipe
ASTURIAN ALMOND CAKE
Time to Prepare: 10 minutes
Cook Time: 20–40 minutes
Servings: 15
Prepared by: The Spanish Kitchen
Ingredients:
• 250 g ground almonds
• 350 g sugar
• 6 eggs
• Zest of 1 lemon
• Vanilla essence to taste
• 4 tbsp cognac (optional if children will eat)
• Puff pastry
• Sliced almonds
Steps:
1. Preheat oven to 180ºC.
2. In a bowl, mix the eggs with 200 g sugar.
3. Add ground almonds, 2 tbsp cognac, lemon zest, and vanilla essence. Mix well and set aside.
4. Line a 23 cm round mold with puff pastry, covering the base and edges. Prick with a fork. (For individual tarts, use 9 cm molds.)
5. Trim excess pastry so it just covers the edge.
6. Pour the mixture over the pastry, leaving space at the edge.
7. Sprinkle sliced almonds on top.
8. Bake for 20 minutes (small tarts) or 40 minutes (large tart). After 10 minutes, cover with foil to prevent burning.
9. Meanwhile, prepare syrup: combine 150 g sugar, ½ glass water, and 2 tbsp cognac in a saucepan. Boil, then simmer for 5 minutes.
10. Remove tart from oven, prick with a toothpick, and drizzle syrup to soak in.
11. Decorate with more sliced almonds.
