Originating in south India, aviyal aka avial is a part of a feast, sadya in Kerala and Tamilnadu, without which no feast of function is complete. Avial is a creamy vegetarian curry that is made with many seasonal vegetables. It is a mix veg recipe, cooked all the vegetables together with masala paste made of coconut, cumin, green chilli, mustard, turmeric powder and to get a tangy taste add tamarind paste or curd / yogurt in the final step of the process. Mostly aviyal is made in coconut oil, most used oil in South India and can be made using vegetable oils. As it’s a part of a feast you will find other recipe along with avial like, boiled rice, sambar, pickles, kheer and other side dishes made of vegetables. In south Indian meal the main item for a feast is Avial aka aviyal and sambar recipe and the feast is served on a banana leaf. here is a step by step method to make a lip smacking aviyal. the preparation of aviyal is very simple compaired to the normal mix veg sabzi we make in North side. Aviyal is a delicious curry made of different vegetables of your choice and cooked together. the main ingredients in avial is cucumber, carrot, potato, yam/ banana, drumsticks, beans other optional tubes like arbi, coconut and a mix of authentic south Indian spices. You can always go for your own choice of veggies. Coconut is the one which should not be missed if you want to get the authentic taste of aviyal.

Drumstick - 1
Yellow Cucumber- 200 gm
raw banana - 1
Snake Gourd - 100 gm
Yam/Suran - 200 gm
Coconut oil/ghee - 3 tbs
Tamarind Pulp - ¼ cup
curry leaves
To Make the coarse paste
Grated Coconut - 1/4 Cup
Green Chilli - 6 to 7
Cumin Seeds - 1/2 tsp
Mustard Seeds - 1 tsp
Turmeric Powder - 1/2 tsp
Garlic - 2 Pods
cumin seeds - 1/2 teaspoon
