The BEST, Authentic Peanut Sauce - Kuah Kacang – Satay Sauce

This would be one of the best dipping sauces ever for any southeast Asian cuisine! Therefore, if you haven’t made one of tasted the authentic Malaysia peanut sauce, check this recipe and start making it.

Creamy texture from the coconut milk, nutty taste from lightly roasted peanuts, the balanced sweetness with palm sugar. Of course, it also has to be slightly spicy with the blended dried chile & fresh spices aromatic flavour such as lemongrass, galangal and ginger.

This dipping sauce is very versatile and can be used for a lot of Asian dishes, if it’s not satay – chicken/meat skewers, “nasi impit/ketupat – type of compressed rice” or salads you can also dip it with your home made fresh spring rolls as I made with Vietnamese spring roll rice wrapper, fresh mangos, carrot, cucumber, fresh mint leaves, fresh basil leaves, fresh cilantro, beans sprouts & red cabbage.

INGREDIENTS:
✅ 5-7 shallots (optional 2 mid-size red onions)
✅ 6-8 cloves garlic
✅ 6-7 cm ginger
✅ 6-7 cm galangal
✅ 3 stalks mid-size lemongrass
✅ 600g roasted peanuts (without salt)
✅20g small, dried shrimp (optional belacan “shrimp paste” or fish sauce) – FOR VEGETARIAN YOU CAN SKIP THIS INGREDIENTS
✅100G chilli paste
✅500ml water ( Do not add all at one – only add step by step as per the video)
✅ 50-75ml tamarind juice ( if you don’t get tamarind you can substitute with lemon juice)
✅ 100g Palm sugar – Do not add all at once – look at the video.
✅ Salt to taste
