Simple Arabic Lamb Machboos Recipe
*Ingredients:*
5 kg lamb, cut into pieces
2 cups basmati rice
1 large onion, chopped
2 tomatoes, chopped
4 cloves garlic, minced
2 tablespoons vegetable oil
cumin
coriander
cinnamon
cardamom
1 teaspoon black lime powder (loomi)
Salt and pepper to taste
water
Fresh coriander and fried onions for garnish
*Instructions:*
1. Heat the oil in a large pot over medium heat. Add the onions and garlic, sauté until golden brown.
2. Add the lamb pieces and cook until browned on all sides.
3. Stir in the tomatoes, turmeric, cumin, coriander, cinnamon, cardamom, black lime powder, salt, and pepper. Cook for a few minutes until the tomatoes soften.
4. Pour in the water or stock, bring to a boil, then reduce the heat and let it simmer for about 2 hours minutes, or until the lamb is tender.
5. Rinse the basmati rice under cold water until the water runs clear. Add the rice to the pot, stir well, and cover. Cook on low heat for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
6. Fluff the rice with a fork, garnish with fresh coriander and fried onions before serving.
